Cooking with wine is often recommended as a way to deepen flavour and bring balance to a dish, but choosing the right bottle can feel surprisingly complicated. Many recipes suggest using a wine that is pleasant enough to drink, on the basis that reduction intensifies flavour. However, this does not necessarily mean spending a large amount.

In the UK, there is a broad range of wines between £6 and £12 that offer good balance and are suitable for most dishes. Whites such as Sauvignon Blanc or Pinot Grigio tend to work well in lighter sauces and seafood recipes, while reds like Merlot or Pinot Noir are often used in stews and braises.

Supermarkets provide accessible options, but independent wine merchants and online retailers can offer more variety and guidance. Practical considerations such as avoiding waste also matter, especially when recipes require only a small quantity.

The smaller bottles (185ml, I think) are practical if you cook occasionally. They eliminate waste and remove the temptation to open a large bottle unnecessarily. That said, freezing leftover wine works surprisingly well. Once reduced in a sauce, any minor loss of freshness isn't noticeable.
