It's not better than the original but Tori Amos's version of "Smells Like Teen Spirit" came up on my Spotify recently and I forgot how much I like her cover.
The Goo Goo Dolls with a pretty good cover of Tom Petty's American Girl (the video quality isn't the greatest)
I love Kate Bush, but Pat Benatar's version of Wuthering Heights is, imo, vastly superior if only because Kate's original was sung in such a strange, gimmicky voice.

Nightwish doesn't do a lot of covers, having an excellent songwriter in the person of keyboardist Tuoma Holopainen, but there is this Gary Moore song that's become a popular part of their repetoire.
First To Eleven have some brilliant covers, three that stand out for me are Bring Me To Life, What's Up and Jar of Hearts
They also do a very impressive cover of Sweet Child O Mine
