I usually make my own, but I will have a backup jar of Hellman's in the fridge. Not with olive oil though, for some reason I don't like the flavour, I usually use rapeseed instead.
I do indeed, just made some yesterday in fact as I had a few spare egg yolks.
While it doesn't have the shelf life of a bought one it does last quite a while, I usually divide up a batch and make tartare sauce/pink sauce out of some, the tartare sauce especially lasts a very long time probably the extra vinegary bits!
I use half sunflower and half very mild olive oil, too much olive oil and the flavour overpowers the mayonnaise.
I love homemade mayonnaise for egg sandwiches and especially for fresh salmon sandwiches too, always the way we had them as children so it's kind of my comfort food for those sandwiches.
