Sliders - same concept, but completely different worlds. I think modern production standards and CGI along with a different cast could be interesting.

American Gothic. It had so much potential and was cancelled after one series as it was too dark. It wouldn't be these days and I'd love to see it redone with some great special effects.

Seconded. Though Gothic done right shouldn't need a lot of razzle-dazzle fx. It needs subtler ones that help build mood and tension, I think. Maybe even practical rather than CGI.
