Every time I buy the stuff it never fails to go hard after opening it. I don't know what causes it but I'm guessing it's because of air, once air gets in that's it. Any method to prevent the stuff going hard?

We buy the squeezy bottles instead. Not had any problems. Much easier to use too.

Maybe store it in a cooler place.
Not too cold. Honey should be stored at room temperature. Storing it in a cooler place can speed up crystalisation. If your honey has started to crystalise you can gently warm the jar in warm water (not boiling) and it should return to the correct consistency.
