I've made vegan katsu curry and also made a tofu and edamame stir fry, both were delicious. I'd love try try some more vegan Japanese food. I need to look for some recipes.

I'd definitely want to see the penguins! There are hundreds of bird species, and one of the largest miniature iguana populations on earth - all set in contrast to volcanic rock formations floating far from the world's mainlands. An untouched, isolated haven. It would be a truly surreal experience in travel.

Island hopping in Hawaii – I was torn between this and a Safari in Tanzania but Hawaii has really been a dream destination for me since I was little. I'd love to go to 2-3 different islands over two weeks and enjoy the beauty of the island. I've also been trying to learn to surf (it's been a long process) so it'd be a dream if I could surf every day and really improve my skills

Iceland for me too - same reason as Gemma, amazing landscapes, and northern lights as well (but I have seen them before). Not excited about the food as much - zero interest in trying whale or shark or puffin, or any land based mammals.
